HOW TO PREPARE PEPPERED SPICY CRABS
INGREDIENTS
- One bowl of fresh crabs
- Ginger & garlic paste
- One small bowl of Scot bonnets ( at Rodo)
- Onions
- Seasoning cubes or powder
- Salt

PROCEDURES
Clean the crabs by removing the outer hard backs. Then remove the very tiny hands or fangs. Place the cleaned crabs in a pot. Season with 1 tablespoon of salt, 2 seasoning cubes or powder, diced onions,one tablespoon of ginger & garlic paste. Then add 2 cups of water, stir and allow to boil for 10 minutes. Remove from fire and stock, set aside.
Combine the scotch bonnet with 2 medium size onions, blend roughly. Place a pot on the fire. Add a cooking spoon of oil. When hot a bit, pour in your roughly blended scotch bonnet & onions. Add in one seasoning cube, a tablespoon of ginger & garlic paste plus a pinch of salt. Be stirring constantly so it doesn't get burnt. After frying this for about 8 to 10 minutes, pour in your boiled seasoned crabs. Reduce the heat and stir it all very well together. Cove and simmer on low heat for 7 minutes. Stir once more and remove from the fire.
